Columbia Restaurant Group Corporate Chef
Named corporate chef in 2005, Geraldo Bayona (Chef Jerry) is based at the flagship Columbia Restaurant in Tampa’s historic Ybor City – Florida’s Oldest RestaurantSM. The restaurant has been continuously owned by the Gonzmart family since 1905. It has 15 dining rooms, and seating for 1,700 people.
Chef Jerry works closely with all of the Columbia Restaurant Group’s 13 restaurants in Florida to ensure consistency with the Gonzmart family’s century-old recipes and to monitor overall quality of presentation and flavor. He also is responsible for helping create new recipes, both for existing restaurants and for new concepts such as Ulele, Goody Goody and Casa Santo Stefano (a Sicilian restaurant opening in 2018).
Chef Jerry joined the company in 1997. He earned his degree from the Florida Culinary Institute in West Palm Beach.
