Charles Charbonneau honed his craft at the Culinary Institute of America. He then joined Hyatt Hotels where he worked with numerous European trained chefs. Next, he worked for several Ritz-Carlton hotels including Atlanta, Boston, and Laguna Niguel, where he was executive sous chef for the venerable Christian Rassinoux. Charles then became the opening executive chef for the Ritz-Carlton Cleveland where the hotel and dining room became a AAA Four-Diamond award winner during its first year of operation. Charles then pursued his career with Interstate Hotels & Resorts where he took the position of corporate chef for the fast-growing company. Some of his responsibilities included opening hotels and restaurants both nationally and internationally, including the Augustine Grille at the Sawgrass Marriott. From 1997 to 2008, Charles was the executive chef of the Sawgrass Marriott Resort & Spa.
