A native of Washington state, McPhail started out making salads and appetizers after moving to New Orleans when he was 19, working his way through every stage of the kitchen before taking over as executive chef at Commander's Palace in 2002. This year, he was one of five James Beard Foundation finalists for best chef in the South.
